Since there are reports of a version that has no charred corpses FRM's, it would be cool if someone could identify the FRMs in CRITTER.DAT that correspond to that and we could make a patch for that.

If his situation is analogous to the UK/US one, simply adding the FRMs would not do the trick, you'd need new map files too. For the FRMs, what's wrong with the existing gore patch for the German version? Or is this a new German version that has all special deaths except for charring?
