Do you think it will work if I install
- Fallout 2
- the unofficial Fallout 2 patch (1.02.25)
- the FO2 Restoration Project 1.2
- and in the end the High resolution Mod 1.3

Or is this too much (or too complicated for a noob?)?

It's not to complicated if you read the readme:

- the FO2 Restoration Project 1.2
then
- and in the end the High resolution Mod 1.3

The the unofficial Fallout 2 patch is what the resto is built around, so installing that does not only make no sense, but will fuck up your install.
