Great weapon variety, one shot pistol, revolver, one shot rifle/musket, revolving rifle and knife or sword. Most of the fight would be spent reloading.

There was Darkest Days, but it's only partially Civil War.
I guess Smoking Guns/Fistfull of Frags would count, although it's a bit later than the Civil War. But revolvers, repeaters and gatlings are pretty cool.
