Well the problem with a plug and play driver is that it doesn't have specific refresh ratings for different resolutions. Your Voodoo won't risk running higher resolutions at unknown refresh rates because doing so could ruin your monitor. Try finding or using the real drivers for your monitor.
I'm surprised that your plug 'n pray drivers don't have the refresh rates however...
I remember running my monitor at 1024x768x16bit when it only supported 800x600 max... wacky drivers...
