What exactly change and what can you do after the ending?

Oh and some companions scold you for your choice after the ending but I don't think anyone but the droid and buzz lightyear will leave you for your choice so, yknow, whatevs.
 
Damn, the game is such a mess in that part, and it was mostly what's boasted about by most of the fans. Were there any games out there that worked with a feature of playing after the ending? Aside from Fallout 2 as I explained, Dark Souls 2 also allowed playing after the ending and it kinda worked if you wanna PvP/Sunbro-ing without the hassle of having to deal with higher-HP enemies.
