The Wing Commander games and Privateer.
I love being a space pilot or free trader.
Sure Elite gave more freedom but in Privateer you at least felt you also had a short term goal; solve the Steltek mystery and stop the Steltek probe/stop the Church of Man from destroying Gemini Sector.
Another adventure series I really liked were the Journeyman games, of course they are like Myst but the atmosphere felt great and Arthur must be one of the best sidekicks out there..
Has Freespace 1/2 also been mentioned.
I agree on almost all of the Lucasarts adventures, I don't know how to start in which order I like them, but don't forget the Revolution adventure games as well.
Try out "Beneath a Steel Sky"
There is also Lost Vikings 1 and 2.
