Are you planning on being the Courier? If not, I would get Roleplayer's Alternative Start. Also get YUP for bug fixes.

I recommend Fear and Loathing Guide.

Besides that, here are some of my favourites:

New Vegas Uncut Series

YUP Gameplay Tweaks

WMX
http://www.nexusmods.com/newvegas/mods/39651/?

Wasteland Flora Overhaul
http://www.nexusmods.com/newvegas/mods/39856/?

And optional:

Vault 22 Overhaul (It is a bit tax heavy, but makes the vault much more atmospheric).

Outside of that, I use some minor mods, I made myself:
-More Meat from Animals
-DR for Armours, etc.

I do not recommend FOOK, though. It is a huge overhaul, that doesn't work well with many mods.

That one isn't bad, but I personally prefer: 100% to pick a lock with force, 1 password, etc. It is much more simple and less time consuming.
But it is much less RPG-like and a bit cheaty. Since @Ben Soto was mentioning roleplaying in this LP I thought using the character skills for the lockpicking and hacking would make more sense for his playthrough.
Also sometimes people who watch LPs do not like players to play with mods like that (100% chance of succeed on tasks) because that takes away a bit of the excitement of watching someone playing and sometimes failing at things .

Can't deny that. That is why I didn't put it in recommended. I prefer it myself, but it is a bit too cheaty.

The Fallout Character Overhaul improves the faces of the vanilla game.

The Courier's Cache is fun comedy quest that adds a nice player home and good looking weapons and armor.

The Desert Scorpion Armor is a good armor if you want a ranger style character. Not available on the Nexus anymore.

The armor is sold at the Gunrunners.

Resource Based Hacking and Lockpicking
http://www.nexusmods.com/newvegas/mods/56117/?
I use this to make you "spend" lockpicks/multitools for hacking/lockpicking, with skill increasing reducing the cost.

Jsawyer Ultimate Edition
http://www.nexusmods.com/newvegas/mods/61592/?
to quote the page:
This mod is a complete, from-scratch remake of the original JSawyer mod. It aims to stay as true as possible to the source material, and clean up any inconsistencies or errors there were, whilst generally refining things and improving compatibility with other mods.
Jsawyer made a rebalance/gameplay tweaking mod, that is now redone in order to ensure better compatibility.

Equipment Restoration Project
http://www.nexusmods.com/newvegas/mods/43875/?
Restores items/armors/weapons that were not implemented upon the finished game.

Try once, but not for me.

If there is one thing that this serie does not need IMHO it's a perfect waifu with model face as a companion.

Has a good house in this mod however, in Novac.

Also, I forgot. If you want more variety in weaponry, get Classic Fallout Weapons. It brings back all of the weapons (and a few armors, I believe) from the Fallout 1/2/Tactics.
