Fallout: 10mm SMG until I got an Assault Rifle (why do so many people seem to like the Combat Shotgun? The AR is better in every way), which I used until finding or buying a Plasma Rifle. Once I got the Gatling Laser, I switched between it and the Turbo Plasma Rifle depending on the situation.

Fallout 2: God, there's so much crap in this game that the weapon progression's almost never the same. The only constants are Pipe Rifle to Shotgun at the beginning, and Gauss Rifle/YK42b Pulse Rifle at the end (Vindicator Minigun if I've been cheesing). The Bozar is lame, so I don't use it.

FOT: Raiders- MP5 until AK47.
Beastlords- AK47 mostly, Neostead Combat Shotgun for grinding up the Sheepclaws and larger Cockroaches.
Super Mutants- M249. Sometimes the Neostead against the Metal-armored ones toting Browning M2s.
Reavers- M249.
Coldwater "Brotherhood": M249 mostly, Plasma Rifle against the ones in Power Armor.
Robots- M249 until Plasma Rifle, Plasma Rifle until Pulse Rifle Prototype, PRP until Gatling Laser (or YK42b to make the last few levels a bit more challenging).
That's when playing FOT with one character on Iron Man. When playing a full-sized party I just tend to use whatever I have the most ammunition for. Meaning everyone tends to have 7.62mm-based weapons in the first half of the game and Micro Fusion Cell-based ones in the second half.
I don't use the Browning M2 or Gauss Minigun at all for the same reason as the Bozar.
