North Korea

Old Koksan 170 mm artillery units hiding in mountains close to the borders would be pretty dangerous too, they can hit Seoul really hard.

Not with the Americans in the way.
They can stop artillery shells yet? Remember this isn't Star Wars with force shields such ;) ... Korea is really very small, and the North Koreans posses a large arsenal of conventional weapons, that can hit civilan targest just fine, there really isn't much of a forewarning to an artillery barrage or even a short range missile strike, and most missile defence is average at best and probably not present in every location probably just around military areas of high value.

If North Korea would decide to attack the South, Seoul would be a smoking crater. Obviously, NK would stop to exist right after that attack, but they would still cause a tremendious amount of damage to anything in their reach.

Would the North really risk doing it though? Even China's fed up with what they're doing.

Most probably not, as I said, it would be their death sentence, the moment the North attacks, they stop to exist. It's just purely hypotethical. If they wanted to, they could cause a tremendious amount of damage to the South, even without the use of nuclear weapons, simply because they have the artillery and missiles to do so. Just because doing so, would be absolutely crazy, doesn't mean that it isn't something they could do ;).

North Korea's invasion force headed for Seoul is shredded quickly

The main NK force would obviously go down that main highway to Seoul, like the last war.

So say NK were to invade SK, what would prevent this from blowing up into a third world war?
Dunno, the fact that NK attacked first, if we use that as example, as it would place todays China in a very difficult position. The South is allied with the US and the US has the NATO behind it, or well the US is basically the NATO, at least in my opinion, but let us not go there and keep it simple. NK would stop to exist, the moment they attack, and it is very questionable if China would actually risk to intervene. It's not the same political stage like in the 1950s, with the Soviets and other nations to back them up. China knows that a war between the US would ruin them and the US knows that it would be extremly risky and costly. So if NK attacks first? It's over. Beacuse rationally, China would probably do nothing. If the US would attack first however, for what ever reason, it would be a lot more complicated as China would have a plausible reason to believe that this attack is aimed at them, as they might simply use NK to enter China. But a lot of ifs and unknown variables. So who knows.
