You wouldn't be wrong about that. There's really only one character in there that's worth a damn imo. If you start watching I suggest sorting through the episodes because the series is littered with filler.
Yes, if Guts never left Griffith would have never been so distraught and would have never slept with the princess that night. Literally everything is caused by Guts leaving. It was obvious how important Guts was to Griffith so him just kinda fucking off with no explanation was obviously going to be a problem.
If it ever happens that you have some very obsessive girl friend, who's doing some really crazy shit after you decide to brake up with her, that you will readily accept all the blame by the authorities once she burned the world down :p.

Rock Lee. He's the only one who made an impression on me. I liked his fighting style and spirit. To point where I wished he was the main character tbh

Sure did. Had a good premise and idea but did not do much with it and progressively got worse as the series went on. I prefer the Abridged version over it.

I'm also a bit of a minimalist when it comes to anime appreciation. I always loved Akira, which I first saw as a kid. It terrified me, but in such a sweet delicious way. I then found out original comic books existed, but never had the means to get my hands on them.

Oh yea I've also seen Spirited Away. I like the Japanese and their cartoon stuff. They are actually rivalling Disney, and that is no small feat. Anime characters are even cuter (kawaii!!) then the Disney rats and rodents. And the anime characters can pick up guns and start blasting mofos away all of a sudden. They move seamlessly from "aww, cute" to "omg no!". I can't imagine Donald Duck picking up a pair of magnums and blasting folks.

Thing about Japanese-vs-Western animation is that this isn't so much a "Japanese thing" as it is a "not Hollywood, for a change"-thing.
Miyazaki impresses western, hollywood-saturated viewers with the absense of a predictable good-versus-evil approach (which we have since gotten better at appreciating with series like Game of Thrones), but this kind of entertainment has always existed.
The main problem is that the Hollywoody formulae just drowns everything else away when it comes to tickets and marketing.
Same with visual style. As much as I've allowed some Japanese media to influence my style, I don't really like when people suggest it is manga-inspired, because it really is not. It is just NOT very Disney-inspired or NOT particularily Marvel/DC-inspired
It is a pity European animation and comics have gotten almost forgotten over time, but there are some real treasures to be found there.
Realism, unorthodox storytelling, detailed art, dynamic effects etc are not the sole domain of Japanese art
You know, when watching animes what is sometimes disturbing? Dubbing. Or what ever it is called. No clue. The only way where I can really enjoy most animes, is if they talk in Japanese with subbtitles. There are very few animes, where I can stand the voice acting.
I often can't stand the japanese voices. Mostly in the more kids-oriented animes like Naruto or One Piece, though. But there the english and german dubs are just as awful, so why even bother with that shit.

I'm more for reading subs than hearing dubs though there are a few exceptions to this like Cowboy Bebop (Steven Blum) and Dragon Ball (Goku still sounds like a woman even as a full adult male). Shows like Gintama are better heard in Japanese due to the slang and jokes used only being able to work in Japanese (and when directly translating them for dubs, something will be lost in translation). Then again, I don't speak Japanese so I won't get some of those jokes and slangs either.
