A. We don't know ghouls NEED water the survive, only that the ghouls of necropolis died to a lack of water that likely resulted in them not knowing that radiation heals them.
B. As has been pointed out before, the door to the refrigerator isn't properly sealed, and has a fairly large gap in it, which is why his voice can come out, and why he had air to breath. Are you really so fucking thick skulled you dont understand that gap = water can get into the fridge. Its not like Boston is like D.C. or the Mojave, where it never rains ever.
